In LTN, I had the ability to control the inserter, so if I wanted 500 copper, 100 iron it would collect exactly that. This seems to work by slot, so I end up with a full stack of something where I have multiple items.
Is there any way to specific an exactly count so even if the provider chest has more of stuff it only takes an exact number (a blueprint would be awesome) ?

That really doesn't answer the question.
If I request only iron plates, then it limits the slots, but what if I only want 50 iron plates, it will still give me a whole stack. Not a problem with iron plates but if what I want are turrets, then they're much more expensive and I might only want 10 at an outpost (to replace damages and auto-repair), not a whole stack of 50.
In LTN it would add a condition to the actual inserter so that it stopped loading when my quantity was achieved.
