Oil isn't complicated enough. So I made this.

Oil now needs to be fractionated, treated, and then processed into the product you want.

Including recipes and resources from https://mods.factorio.com/mod/adamo-carbon and https://mods.factorio.com/mod/VPE, the first step of processing oil into usable products is to fractionate it. Fractionating separates it into constituent broad-category products, which can be purified, cracked, and reformed to provide exactly what you need. Gasoline or Methane Gas are good fuel sources, Olefines and Aromatics are used to make Plastic, and sulfur production is a byproduct, as oil needs to have the sulfur removed to be less polluting.

With the addition of Tar Sands and Natural Gas as sources of petroleum, you no longer need to find that Crude Oil patch. Or you can do that anyway, cause Tar Sand takes extra processing to be able to use.
