Enjoying the mod! I believe that information on rates of currency for goods would be useful. For example, how many apples must be sold to generate one currency.

That's a great suggestion! The information on how much each item is worth in currency is already in a table in the mod, that we'd need to expose somewhere. This information probably needs its own gui, because the tips and tricks are not a good place to store information that you need to revisit, and especially not for information that can change.

Eventually we may see changing prices based on market demand, so that's something we should work on :)

Demand based pricing would be excellent. I've been playing a lot of Gear City lately and one thing in it I love that might be applicable is having essentially chance based purchases. Based on the wealth of customers and the price and and item sold a certain percentage of buyers will purchase your product.
The opposite is also true, so selling something for a lower price increases sales. This would be particularly useful if selling goods cheaply (or even giving it away) increased growth past the current limit.
