1 - From one of the pictures I assume there are Demolishers on it, is it only demolishers or bitters too?
Just demolishers currently.

Yes, it should. Though I'm not sure if https://mods.factorio.com/mod/cargo-ships/discussion/6776c92bc1563e84a703d7b6 issue has been fixed. We ran into on the comfy server, but looks like the mod has been updated since (no response from author on the issue. Actually the cargo ship mod at the time let ships sail on lava and oil as well.
