Mining a chest allows players to pick it up with all the items inside and carry it in their inventory. Also supports vehicles, tanks, and accumulators.
Are you by any chance accidentally activating the toggle, such as by pressing the hotkey (default: J)? Check to make sure the shortcut button is lit up when you're unable to pick up chests.
