This is definitely something that could be done, most likely with minimal changes to the already existing code. In fact, not having to keep track of inventory availability would make it much more efficient as well as easier to code. That said, this sort of overpowered mod isn't something I'm particularly interested in. I try to keep my mods balanced (not always successfully) so as not to take away the fun of the base game.
If it's something there's a demand for, however, I don't think it would be very much trouble to modify this mod into something like this. I'll take a look at it and let you know if I get one up.
