Is it possible to disable custom AI, keeping only vanilla AI while having the new enemy types?

yes. You can call menu from player settings

Yes, but if I disable processing for e.g. Nauvis, all new biter bases spawned are vanilla. I'd like to keep vanilla expansion, vanilla pollution mechanics while having your various biter bases.
