Are you planning to add any ammo that interacts with other mods?
If you want to go down the path of adding ammunition to your mod, then here I will write what came to my mind while I was playing with different mods and this mod.
For me, the mortar turret is strongly associated with SE, as is the ironclad itself. And it has always been a shame to me ̶t̶h̶a̶t̶ ̶I̶ ̶c̶a̶n̶'̶t̶ ̶a̶u̶t̶o̶m̶a̶t̶e̶ ̶t̶h̶e̶ ̶m̶o̶s̶t̶ ̶t̶e̶r̶r̶i̶b̶l̶e̶ ̶w̶a̶r̶ ̶c̶r̶i̶m̶e̶s̶ that there's a cool personal weapon, but there's no turret option with it.
So here's what you can add if you want, if Space Exploration is enabled:

An infecting mortar shell
Creates: 1 × Infecting Puddle
Speed: 6/s

Damage: 1 Acid (yes, I just copied the characteristics from the description in the game)
Perhaps if you just copy the part of the code describing the infecting munition will not work, it will be a little more difficult. To be honest, I don't know much about modding, so I'm not sure.
Let me remind you that the main essence of this SE ammunition is that it imposes an effect that slows down movement, causes damage, and when a target dies, it explodes, damaging nearby enemies depending on its maximum health.
Recipe: 2 steel, 1 grenade / 1 explosive, 1 infecting Recipe: 2 steel, 1 grenade / 1 explosive, 1 infecting Ammunition (or something like that)
It's a complicated recipe, but it's a good force against the crowd.

Changes to hipnosis shell or hipnosis shell mk2
The game has a pheromone dart that lures enemies to the player's side. So it would be possible to use it in a recipe. In addition, as far as I remember, in this case, the biter is not limited in terms of life time.
Recipe: 1 Mortar poison shell, 1 Dart with pheramones

It would also be possible to make capsules with friendly biters in the form of a mortar shell, but in general, although it is a bit crooked, it can be automated using the Renai Transportation mod, and thrusting them into a mine shell may not seem particularly meaningful given that they are much weaker than combat drones. Well, maybe it would be possible to throw several capsules into one projectile. And yes, given the cost and complexity of the product, it's definitely not effective, but I just love watching the biters kill each other :3

Cryo mortar shell
Well. Here, again, it may be difficult to implement these mechanics in a mortar shell. As far as I remember, an ice wall is created there after the projectile hits. It would be possible to implement this through the creation of fragments or something like that.
Recipe: 2 steel, grenade / 1 explosive, 1 cryo ammo. Or something like that.
It would probably be useful for crowd control.
I don't see much point in making a mortar shell out of a tesla cannon cartridge, but anyway I'll just mention it here.

- If you plan, you could add additional compatibility with Krastorio 2 by adding radiation damage to an atomic mortar shell. I think it's just possible to duplicate the explosion damage with the same radius but replace it with the type of radiation damage.
- Antimatter mortar shell. Yeeessss. Well, I think it's really dont necessary, but if you want, you can do something like that.
Plutonium Energy:
- Plutonium mortar shell. It also doesn't seem to make much sense because of the power and price, but still as an option if you want to add.
If anything, it's just an idea that I expressed while I had nothing to do, yeah.
