P.U.M.P. will create pumpjacks for all selected oil wells and connects them to each other without taking throughput into account. You'll have to arrange the exit pipe yourself. P.U.M.P. is for the lazy people, not for the folk that want to squeeze everything out of every resource. :-)
That said, P.U.M.P. might still be helpful:
If you look at the gif on the info page, you'll see that the pipes converge in the middle. That would be a typical layout P.U.M.P. tries to achieve. If you disconnect the pipes at where they converge you might be able to manage throughput manually by making 2 or 3 exit pipes.
You can also just select half of the oil patch. P.U.M.P. will only connect the selected oil wells. So by selecting less oil wells, you'll get smaller groups of connected pumpjacks. P.U.M.P. is prevented from working if there are other pipes nearby. So this approach might work against you if you try split it in too many segments.
