You should be able to reduce your hunger somewhat by eating raw fish. And to add to that, why can't raw fish be used as an ingredient in fish-based recipes? At least the basic ones.

You can now eat raw fish to fill hunger and meat bars.

I catch and eat fish, but my hunger and meat bar remain unchanged. What did I miss?

I found it :) I didn't know there was a separate UI for eating fish.
And please provide a shortcut key to toggle the status bar.
I don't have a good place to put it on the screen.
It keeps covering up the screen here and there.

I've now added a hot key (Shift+H) to hide/show the nutrition bars.
