You can alt + scroll over the set recipe in the gui or when selecting the assembler to change the recipe quality.
Providing the player with new tools or adjusting the game interface, without fundamentally changing gameplay.
Furnaces, assembling machines, production chains.
Change blueprint behavior.

Can you clear the recipe, wait for the ingredients to be moved, and then set the new recipe?
im pretty sure clearing the recipe by script just forces the items out too, the behaviour is kinda unique to circuit set assemblers
