I have two different merged chests, 1 is 271, and the other is 1512. So even though it is 27 vs. 180 chests, they both store 100k of iron plates.

I would expect that the larger size would store more.

There is a limit to merged chest inventory size. Default is 1000 inventory slots (maxes out at 21 merged chests). If you want to increase the limit, change the mod setting.

Be warned that unless Factorio devs fixed this, when you insert an item into chest with massive inventory size, it will have performance issues. This is the reason for default inventory size limit mod setting.
