I'm currently using Bob's Adjustable Inserters, if I add this mod and remove Bob's will I have to reconfigure all my inserters or is it one of those "the settings are part of the inserter and this mod just let's you access them" sort of thing?

You can migrate without any problems.
All the setting of the inserter will remain as they are.

Before entering the world check the mod setting, if You do not want to have technology to unlock range and diagonals disable them.

If you enable the technologies to unlock settings Smart Inserters, you will have to research them even if you have already researched the equivalent Bob's Inserters technologies.

well yeah, I could try to implement a tech porting in the future (maybe next update but I'm not sure)
