I'm not sure about it: in most episodes, RIck's car shows and uses no weapons. When it does, it shows quite large energy cannons. AFAIK, it's not possible to make folding vehicle weapons in Factorio, and constant having constant of big guns won't look canonical. Also, this would probably require either development of some energy ammunition, or usage of vanilla projectiles, which is also not canonical.

So, for now, I just decided to make a large equipment grid to allow usage of laser turrets :) Yeah, they got nerfed in F2 SA, but there are other mods to fix this... However, if someone will suggest a good idea for car spaceship weapons, I'll consider implementing it.

I know nothing about the canon so take these with a grain of salt:
Plasma 'Missiles' that act as white phosphorus, dealing an intense flame damage where they land (new blue particle effect would look cool) coming out from the bottom-mid-front of the ship. Any sort of bomb should also work since you don't see under the ship.
Alternatively, small holes on the hull that can be fired out of, implying whatever energy gun is on the inside. Of course that's assuming it's possible to program multiple firing ports
