the Lava to landfill and lava to wall recipes do not have calcite versions.

Thanks for the report. In the next big update, I shift the calcite costs to the melting process. If requested, I could keep the old system as a legacy option.

I thought the ones where you use calcite when the input was lava was fine, I would like it as a legacy option.

Sorry that I've missed that, I will add that option for the next version. But beware, it will be more expensive than what I've wanted, as I'll add a calcite to any recipe, not just for the equivalent of 50stone/500lava or something.
