Being able to set them to specific ores would make Deep Mines too op.
The only downside to them is their logistic challenge of randomly mining every possible ore.
Update:
Reviewing usage of Deep Mines I realized they are pretty op as they where, especially when combined with void chests.
So I added recipes to mine dedicated ores.
