Because the docs are more a riddle than docs? "Blueprints are centered on" is so not helpful. What's "the first"? Top? Bottom? Right? Left?

Hope the dev (and it's a great mod on principle) isn't writing documentation for a living…

If you're confused, just replace the chest you want it centered on with a wooden chest.

(It's usually top then left. But you can hack the blueprint source code to make it anything you want. This behavior is undocumented by the Factorio devs and subject to change. The mod does not implement a custom entity sort for performance reasons.)
