In the base game there is a button to halt all unloading on a planet and it would be nice if there was a way to do the same with Inter-platform logistics.

What I mean is that you can still request and have stuff delivered to the ship but the ship will not send stuff to other ships within the system.

The other option that would also be neat is to designate a space station that sends everything out and receives everything but ships are not allowed to transfer between themselves

I recently added a checkbox to disable interplatform requests, it should be in the latest versions (>=0.8.1).

I have thought about the concept of your second request, but could not find a solution that works well - I will put some more thought into it...

Something like mossb said would be nice. I've been trying make a similar setup recently with one platform being a depot for others in it's same orbit. Being able to control the yes/no for interplatform requests with circuits, like you can for roboports outputting number of bots would be awesome if possible.
