Maybe being able to control the bots more closely with circuitry connected to the roboports might be a nice why to manage it.

i imagine it'd work similarly to the mod "logistic supply toggle" ? maybe worth a look...

You could just interpret the ore deposit as a passive prodiver chest, and ore mining would automatically be limited by demand.
