Customize Stack Sizes in detail in-game easily.For proper toolbar GUIs display, change the value of maximal_width of tooltip_title_label in factorio\data\core\prototypes\style from 350 (by default) to 2000.

For some reason applying it to a SeaBlock map (most recent SeaBlock version) the stack sizes of all items update except all the plates as it seems . So far I have no idea why this is.
After further looking into the problem only classic iron, copper and steel plates as well as the classic ores are affected, seems to be related to something Angel's Smelting does with overriding recipes and results.
