I have this in-depth system in the mod settings where you can configure which ores are replaced and how. I'm worried that this is hard to understand and not a good ui so it would push players away from the mod. So i'm considering removing it or simplifying it.

The presets already give a number of options. An editable config file inside the mod is and has always been available, though updating the mod might overwrite it. And none of this matters, what matters is wether players use it. Hence i'd like to know some opinions.

I use the settings! I haven't used this mod in a while, but this mod is definitely one to come back to every once in a while.

I think the settings are good as they are now, the only slight change I can think of, is to move the ability to exclude the starting area to the general settings, as a toggle. That way, you won't have to make 2 versions of the same config, reducing the clutter in the drop-down menu.
