As for your first issue, I suspect the problem is that Shift-T also is bound to something else.
As for changing default keybinds:
I've considered it, but there's always a chance that some other mod also use that keybind.
So how should we mod makers reduce the chance of colliding keybinds?
I chose ctrl/shift/alt-T for the three keybinds I need as they're all related to research, and as the default key for displaying research in the game is the T button.
Unfortunately this crash with Foreman, another popular mod, who decided to use ctrl-T for toggling the GUI.
And just now I realized you're describing a completely different issue... The keybinds aren't doubled up, I just changed non-standard ingredients from ctrl to alt and added least ingredients on ctrl...
