Hello, unfortunately I don't know much about the mods...what do I have to set so that the oil/sulfur refills. Or does one that has already been tapped also refill?

Oil Refilling should be enabled by default in the Map Settings (Settings -> Mod Settings -> Map), There you can also enable the refilling of Sulfuric Acid geysers if wished (or disable oil if you only want sulfuric), The Yield specifies how high each Source will be set and the update states how often it will be updated.
